Chicken Fajita's with Black Rice









     "Winner winner chicken dinner" is what I heard my hubby spouting after his first bite.  That feedback is music to my ears!  Of course, my victory may be in part to Nutiva's new nutrient rich Red Palm Oil I used to stir fry my veggies.  That deep golden color masterfully brings out the rich buttery flavors of all it touches, I've never seen my skillet so happy!  The macros continue to spread the joy at 297 calories, 28g net carbs and 23g protein for each of the 6 HUGE portions!  This is one not to miss  ;)

Ingredients for 6 large servings~
1 Roma Tomato, diced and drained on paper towel to absorb extra juices
1 cup Black Rice
1 pound Grilled Chicken (preferrably Tyson), sliced or diced and prepared ahead of time
1 Tablespoon Nutiva Red Palm Oil
1 large yellow Onion, diced
1 Tablespoon chopped Garlic
Dash Cayenne, according to taste
4 Bell Pepper~Green, Yellow, Orange and Red~cleaned, de-seeded and sliced
1 Avocado, peeled and sliced
7oz 2% Fage Greek Yogurt
Dash Pepper, for garnish if desired

     Dice Roma Tomato and drain on paper towel for several hours if possible, set aside.  Cook the Black Rice according to directions.  Meanwhile heat skillet and add Red Palm Oil, Onion, Garlic and Cayenne til golden brown, then stir in Bell Peppers til crisp tender, may need to add lid to quicken cook time, then stir in sliced Grilled Chicken breast.  Add cooked Black Rice to large pasta bowl making a cavity in the center to add stir fry mixture.  Add a ring of slice Avocado and make a cavity in middle of stir fry to add Yogurt.  Finish by garnishing with diced Roma Tomato, and pepper if desired.  Enjoy  :)
